We’ve officially entered the one-pot season, and these October One-Pot Dinners are cozy, delicious, filling, and perfect for soul-warming meals. From potato leek soup to skillet meals and a pumpkin treat, these are a must for October.

One Pot Dinners

As we enter peak one-pot season, I find myself making cozy food (regardless of the weather, be it unseasonably warm or stormy and chilly). For me, one-pot meals can cooked in sturdy Dutch ovens, stainless-steel soup pots, heavy cast iron skillets (or any skillet, for that matter), or even sheet pans. What sets these delicious meals apart is sometimes a longer cooking time, but always delicious flavors melding together to create satisfying and cozy meals.

October One Pot Dinners Menu

Monday’s dinner is as cozy as it gets. October is made for potato soup, and when an Irish pub inspires that soup, it takes on a whole new allure. This simple but hearty soup is satisfying and simple to make. I’m adding a kale salad with apple slices and, quite possibly, soda bread!

Tuesday’s dinner is a hearty skillet meal filled with Southwest flavors. It’s simple to make, low-calorie, filled with veggies, and ready in just over 30 minutes.

Wednesday’s dinner will have you thinking about takeout, but healthier and more delicious when made at home. It’s a chicken noodle dish with vegetables tossed with an Asian stir-fry sauce. Yum!

Thursday’s dinner is almost always a seafood meal. This one pot recipe is a fuss-free, hearty meal, all made in one skillet. Tender salmon, vibrant vegetables, and perfectly cooked rice. One pot, easy clean up, healthy ingredients!

Friday’s dinner is made in a skillet, is super easy to make, and can even be adapted with your favorite taco or enchilada ingredients. For me, it’s Friday perfect. Add a green salad, and you’re good to go!
