Cozy Fall 30 Minute Dinners Menu

Monday’s dinner is a quick and easy homemade takeout favorite. And to me, it’s always comfort food! With all the veggies, it’s a one-pot dinner to begin a new week.

Tuesday’s dinner is another one-pot pasta dish that’s big on flavor. It features ground sausage, peppers, and escarole. I’m adding a fall salad for a delicious Tuesday dinner.

Wednesday’s dinner is a Mediterranean-inspired seafood stew with delicious, cozy flavors and cod. You could substitute the cod for any seafood you prefer. I’m adding whole-grain pitas to round out the dish.

Thursday’s dinner is inspired by my mother’s menu, which she raised me with. It couldn’t be Halloween with a bowl of chili, a square of cornbread, and lots and lots of cut veggies. And yes, while there is always candy lying around, there are also donuts—sometimes homemade (like our healthier baked donuts) or sometimes from our favorite shop.

Friday’s dinner is an easy Italian dish inspired by All Saints Day. This day, set aside on November 1st, is part of a three-day triduum dedicated to remembering the dead, beginning with Halloween (October 31) and followed by All Saints’ Day (November 1) and All Souls’ Day (November 2).

Treat: It’s all about the flavors of autumn, particularly October!
