September One Pot 30 Minute Dinners Menu
Monday is a delicious, good-for-you cozy soup filled with plant protein and late September flavor. While the soup contains greens, I’m adding a side salad and whole grain bread.
Tuesday’s dinner is a Tex-Mex twist on a family favorite Friday meal. Everyone will be excited to come to the table (and I promise, you won’t need to call them twice!). Add all the taco condiments you love, like salsa, refried beans, avocados, tomatoes, lettuce, etc. Serve on whole-grain buns.
Wednesday’s dinner is a skillet casserole that’s made quick and easy with cooked chicken and rice. To prep ahead, use a rotisserie chicken and quick-cooking brown rice (or your favorite grain), or save leftovers from the weekend to reuse for Wednesday.
Thursday’s dinner is inspired by one of my favorite restaurant meals. With fall-inspired vegetables like butternut squash, it’s a healthy and filling dinner salad. And it’s ready in minutes!
Friday’s dinner is all about fall! We combine a favorite fall Friday dish (chili) with all the autumn vegetables for this simple and quick dinner. You can add cornbread if you wish and all the toppings you can think of!
Treat: This quick and easy treat is in individual portions, can be made with frozen or fresh berries, and is utterly perfect as we say goodbye to September.
