    Wednesday’s dinner is all about a hearty vegetarian soup filled with Mediterranean-diet-friendly ingredients, like lentils and veggies. It definitely bridges the summer-to-fall flavors I’m craving these days.

    Thursday’s dinner is a quick, easy skillet meal with shrimp and okra. Before you stop reading, if you’re not a fan of okra, it’s a simple swap with eggplant, green beans, or even zucchini!

    Friday’s dinner has a little bit of summer and a little bit of fall. It’s a Greek chicken recipe that combines a Friday favorite, pasta. It’s delicious and perfect for mid-September! Serve with a green salad.

    Treat: While Friday’s meal may be summer-friendly, the treat is all about early fall and apple season!
