This week’s meal plan features simple one-pot and one-pan dinners inspired by late-summer produce and fall flavors. They may be cooked in a pot, a sheet pan, a casserole, a skillet, or even a grill (Monday is Labor Day after-all!).
But cleanup will be easy with that one pot, pan, sheet pan, skillet, or grill.

September Healthy One Pot Dinners Menu
Monday’s dinner is about celebrating the best of summer in a healthier but absolutely delicious way. Firecracker Chicken Burgers are flavor-packed and made with ground chicken. Serve with whole grain buns, or even in a lettuce wrap. Have fun!
Tuesday’s dinner gives a nod to the incoming fall season with a hearty soup filled with summer produce. It’s packed with good-for-you ingredients in a one-pot dinner I love to make in September. Serve with whole grain bread to round out the meal.
Wednesday’s dinner is an easy one-pot chicken and rice casserole with cherry tomatoes (my garden is brimming with them this year) and sliced zucchini. Swap in your favorite veggies if desired for this one-pan dinner.
Thursday’s dinner is a fall-inspired and flavored salmon that is easy to make and delicious. Serve with your favorite grain, roasted vegetable, or simply with a large green salad, which is my preferred way in September.
Friday’s dinner is a southwestern-inspired meal, made in a skillet, and looks perfect for a fun Friday night dinner.
The Treat this week is a delicious way to say “goodbye” to summer.
