This week’s dinner menu takes large inspiration from our What to Cook in September post of seasonal foods and recipe ideas for this month.

From zucchini and tomatoes to eggplant, greens, and more.

It’s a healthy, delicious season we’re entering… and I can’t wait.

Here’s what we’re cooking for dinner this week:

Early September Dinners

This week begins on the tail end of a 3-day weekend, culminating in Labor Day grilling, cookouts, and all things BBQ. Here are some fantastic ideas for Monday’s Labor Day feast. Save those leftovers for Tuesday’s taco salad!

On Wednesday we’re making a classic summer vegetable and sausage skillet dinner, perfect for quick and delicious weeknight meals.

Thursday’s seafood choice is Maple Glaze Wild King Salmon with seasonal greens. Choose whichever salmon is freshest at the seafood counter.

Friday’s dinner is a classic Italian favorite featuring eggplant and served over pasta, which is always perfect for Fridays.

The treat this week is summer personified… in cookie form. It’s all things s’mores. If you’re not into cookies, and your not making them over a campfire, you might like:
