Smores Cookies Ingredients

Specific ingredient measurements are in the recipe card located at the bottom of this post. But here is a quick list of ingredients:

  • All-purpose flour
  • Baking soda, baking powder, and corn starch
  • Salt
  • Unsalted butter
  • Granulated sugar and light brown sugar
  • Large eggs
  • Vanilla extract
  • Semisweet chocolate chips
  • Mini marshmallows
  • Hershey’s Chocolate bars
  • Graham crackers
  • Coarse sea salt to garnish (optional but delicious!)

How to Make S’mores Cookies

These cookies are as simple to make as traditional chocolate chip cookies. Here’s how:

Preheat the oven to 375 degrees F and line a baking sheet with parchment paper. Set aside.

Step 1: Chop the chocolate, graham crackers, and marshmallows

Roughly chop graham crackers and chocolate bars. Then tear the mini marshmallows in half and set them aside. Marshmallows expand in the oven so to keep them in control, halving the mini marshmallows is worth the extra step.

Step 2: Whisk Dry Ingredients Together

Whisk together flour, baking soda, baking powder, salt, baking powder, baking soda, cornstarch, and salt in a bowl and set aside.

In a separate bowl or the bowl of a stand mixer, beat the butter, granulated sugar, and brown sugar until light and fluffy; 1 to 2 minutes. Then add the eggs and vanilla and continue to mix until combined. Scrape down the bowl before gradually adding the dry ingredients. Mix until just combined.

Step 4: Fold in the Chocolate

Set aside a handful of marshmallows and chopped chocolate bars. Add the remaining marshmallows, chopped chocolate, graham crackers, and chocolate chips to the dough. Mix until just combined.

Step 5: Roll the Dough and Bake

Scoop dough with a cookie scoop (affiliate link) or a tablespoon (I use a 2-tablespoon cookie scoop (affiliate link)) and roll it into a ball. Place on the prepared baking sheet spaced 2-inches apart. Add reserved marshmallows and chopped chocolate to the top of the cookie dough.

Bake for 10 to 12 minutes or until the edges of the cookies begin to turn golden brown. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Tips for Making S’mores Cookies

  • Measure flour correctly: I like to scoop the flour and level with a knife.
  • Don’t overbake: The cookies will be soft when they come out of the oven. Let them cool on the baking sheet to firm before transfering to a cooling rack.
  • Keeping their shape: Marshmallows expand during baking. I like to use a round shaped cookie cutter or drinking glass with a similar circumphrance to bring the edges of the cookie together. Do this immediately after baking.

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon corn starch
  • 3/4 teaspoon salt
  • 1 cup butter, room temperature
  • 1/2 cup granulated sugar
  • 1 cup light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  • 1 cup mini marshmallows, halved
  • 2 Hershey's Chocolate bars, chopped
  • 5 graham crackers, chopped
  • Coarse sea salt to garnish (optional but delicious!)

  6. Bake for 10 to 12 minutes or until the edges of the cookies begin to turn golden brown. Remove from the oven and if necessary. while still warm from the oven, use a round-shaped cookie cutter or glass to bring any wayward marshmallow bits back into the cookie circle shape. Sprinkle a pinch of coarse sea salt if desired. Cool for 5 minutes on the baking sheet before removing to a wire rack to cool.
