September Healthy 20 Minute Dinners Menu

Monday is Labor Day, and we’re celebrating the unofficial end of summer and the beginning of the fall season. Be sure to visit the link with more than 50 easy recipe ideas, from grilling ideas to sides and desserts!

Tuesday’s dinner is a healthy, loaded sweet potato filled with Mexican flavors and condiments. For me, it’s a delightful way to enjoy the taco toppings we love with a fall-inspired base! Consider baking the sweet potatoes ahead or microwaving them to keep the meal quick and easy.

Wednesday’s dinner bridges the in-between seasons of summer and early fall with late-season stone fruit. If you have leftover chicken from Monday’s Labor Day meal or cooked chicken of any kind, from grilled chicken breasts to rotisserie chicken, this meal is a breeze!

Thursday’s dinner is an easy seafood skillet meal that’s ready in about 15 minutes. While the recipe calls for salmon, you can use your favorite fish or the freshest you find at the market. You can also substitute any greens you prefer, like spinach or kale.

Friday’s dinner is all about early fall! With high school football games returning, I have chili on my mind. This version is quick and easy, not to mention delicious, and gets you out the door in plenty of time for all your Friday night activities.

Treat: Because we’re looking at super quick and easy meals, the treat should also be quick. And there isn’t a homemade dessert that’s quicker or easier than mug cakes. I’ve listed two that seem perfect for September, but you might love finding a new mug cake recipe to try!
