Super-fast September 20 Minute Dinners are on the menu this week as we shift into fall. Packed with autumn ingredients, like sweet potatoes and butternut squash, these dinners are delicious, easy, and fast.
The leaves are changing and the air is chilly in the morning. Sweater weather has arrived. This week, we’re cooking fast, healthy dinners in 20 minutes or less.
Here’s what we’re cooking for dinner this week:
September 20 Minute Dinners
Butternut squash is a favorite fall vegetable and we’re making it the star for Monday’s night’s dinner. A family favorite that’s super easy and really creamy and delicious. A marriage between butternut and mac and cheese, cooked in 4 minutes.
On Tuesday, we’re bringing sweet potatoes into the limelight with a delicious twist on Taco Tuesday.
For Wednesday, we’re making a simple Smoked Turkey Panini or grilled sandwich. For me, September begins a season of soup. And when you pair it with a delicious sandwich, everyone is happy. I’ve listed a recipe for the sandwich, Pair it with your favorite soup.

Thursday is always a seafood night. Every fall, I try to cook my favorite Maple Glazed Salmon as many times as I can. The flavor is deliciously autumn.
Finally, autumn Fridays deserve a healthy, delicious bowl of chili. And this one is ready in 20 minutes. An easy dinner to free up time for fall Friday events… like football!
Maple Pecan Oatmeal Raisin cookies are the treat, and definitely worthy of the first week of fall.
