I’ve been spending a lot of time in the produce section of my local market these days and lingering at farmers’ markets as often as possible. And then my own garden is brimming with tomatoes, greens, herbs, and more.
It’s a happy time of the year to make food for those we love. So much variety at our fingertips!
Yet, it also seems like one of the busiest times of the year. Even if you don’t have kids in K-12! So, we’re keeping dinners delicious, quick, and healthy!

September Quick and Healthy Dinners Menu
Monday’s dinner is a must at my house every August or September. If there is an abundance of zucchini to be used, I’m making this dish. It’s a classic and ready in under 30 minutes!
Tuesday’s dinner celebrates the transition from summer to early fall with a quick and easy salad featuring all the veggies we love this season, plus quick, seasoned pan-seared chicken breasts, all in about 15 minutes, give or take!
Wednesday’s dinner makes a mouthwatering and wholesome meal that’s ready in 25 minutes, using only one skillet for easy cleanup. This meal is packed with protein for healthy cognitive function and fiber with a healthy grain.
Thursday’s dinner also stretches from one season into the next with a cozy, delicious, easy to make soup with light, summery ingredients. It’s a no recipe “recipe” that’s easy to make your own! Serve with whole grain bread and a salad to round out the meal.
Friday’s dinner is a quick and healthy pasta dinner loaded with September ingredients and ready in about 20 minutes.
The Treat this week takes us back to grandma’s house with an apple dessert that will remind you of home.
