It’s not possible that 2022 can fly this fast.
But we’re embracing the season change and sunshine that may or may not be here yet, the blooming flowers and the promise of warm days to come.
I love when our dinner menus can reflect the seasons. The spring is especially delightful after a long winter. Fresh greens and newly arriving produce are such refreshing ways to celebrate.
Spring One Pot Dinners
Monday’s dinner is bright and beautiful, a meatless Monday twist on masala. Serve with your favorite grain and perhaps Naan too. And always — add those greens!
For me, spring tacos are often fish tacos, and Tuesday night’s dinner is packed with flavor and super easy execution. Delicious for a Tuesday weeknight dinner. Add your favorite taco condiments.
Wednesday’s dinner is a 15 minute Instant Pot twist on favorite takeout. Simple, easy, and super yummy. Again, add your favorite grain or serve over greens.
On Thursday, we’re baking salmon in a foil packet. It’s one of my favorite recipes and ways to cook salmon. It’s sweet and so tender and moist. If you’re being good — watch the sauce!
Friday’s dinner is a skillet pasta my guys absolutely love! Simple and super easy.
The treat is all about cookies and lemon and spring.

Monday: Cauliflower Tikka Masala with Chickpeas
"In this vegetarian riff on a popular Indian dish, we swap in cauliflower and chickpeas for the chicken in tikka masala. The cauliflower's nooks and crannies are particularly good at soaking up all the intense flavors of the sauce. Serve over rice for an easy healthy dinner that's ready in just 20 minutes."
Tuesday: Tilapia and Poblano Tacos
"Here's a quick take on fish tacos: just sauté fish, onions and peppers and serve with tortillas and some simple toppings. Poblano peppers vary immensely in heat level and tasting them is the only way to judge how hot they are. So before cooking, taste your poblanos and add a pinch of cayenne or a jalapeño if you want more heat. Use green bell peppers if you want a milder taco."
Wednesday: 15 Minute Chicken and Broccoli
Chicken and Broccoli is a super quick and easy, utterly delicious one skillet dinner recipe that's ready in under 15 minutes. No need for takeout, it's a simple recipe with mostly pantry ingredients.
Thursday: Irish Salmon and Dill Sauce
This Irish Baked Salmon recipe is deliciously fresh and easy to make with Irish flavorings and simply baked in a foil packet on a sheet pan. The drizzle of Dill Cream Sauce, which almost makes itself, is utterly divine and easy.
Orecchiette Pasta with Sausage and Broccoli Rabe
