Ingredients

Here’s what you need to make these easy pizza pockets. Ingredient measurements are in the recipe card at the bottom of this post.

Think about what you love on a really great pizza, then adjust to a mini size and include in your pizza pockets. This is one of our favorite combinations of ingredients:

  • Ready-made refrigerated biscuits
  • Shredded cheese: I love an Italian blend or shredded mozzarella cheese
  • Ready-made pizza sauce (or if you can using Mexican-inspired flavors, my Homemade Enchilada Sauce is a great swap!)
  • Cooked and crumbled sausage (optional but tasty!) or your favorite cooked meat, if using.
  • Green peppers, finely chopped

Frequently Asked Questions

Can you reheat our freeze these pizza pockets?

Yes! And they’re so much healthier than the ones you can get in the freezer section of your market. If you have any leftover pizza pockets, they can be stored in the refrigerator and reheated for around 30 seconds in the microwave for snacks throughout the week or frozen for longer storage.

Can I make these pizza pockets in an air fryer?

I’ve not tried it but I can’t see why not — do let me know how they turn out!

Ingredients 

  • 1 can refrigerated biscuits 8-10 biscuits
  • 1/2 – 3/4 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce plus more for dipping
  • 1/3 cup cooked sausage crumbled
  • 1/2 cup chopped green peppers

Instructions

  • Preheat the oven to 375 degrees and line a baking sheet with parchment.
  • Roll or stretch out each biscuit as thin as possible. Add 1/2 to 1 tablespoon of pizza sauce to each biscuit. Top with shredded mozzarella, sausage, and peppers.
  • Fold each biscuit in half and pinch along the edge to seal. Then bring the corners under and roll into a ball shape. Top each biscuit with a sprinkle of shredded cheese and seasoning if desired. Place each pizza seam side down on the baking sheet.
  • Reduce oven heat to 350 degrees and bake 14 to 17 minutes or until lightly brown. Serve with warm pizza sauce for dipping.
