The key to quick in this meal is the size of the pork chops. And if at all possible, find pork cutlets with the bone in.  While thicker is usually more flavorful, thinner will feed your crowd in half the time.

Choosing pork chops with the bone in helps protect the chop from overcooking. The fat around the bone helps keep the chop juicier and tastier.

Ingredients

Scale

medium red onion, thinly sliced
1/4 cup balsamic vinegar
2 tablespoons honey
Salt and Black Pepper
3 tablespoons olive oil
4 pork cutlets with bone, about 1/4 inch thick
1 medium red cabbage, shredded (about 4 cups)
1/2 cup roasted and salted pepitas


Instructions

Place onion in a small bowl with 1 tablespoon balsamic vinegar and 1/2 teaspoon salt; stir well.

In a 12-inch skillet, heat 1 tablespoon of olive oil over medium heat. Meanwhile, season pork chops with salt and black pepper; add half of the chops to the skillet. Cook 2 to 3 minutes each side or until golden brown. Transfer to a plate; keep warm; repeat with remaining chops and remove to the plate.

In the same skillet, add 2 tablespoons olive oil and the cabbage. Saute over medium heat until wilted, about 10 minutes. Add the onions, remaining balsamic vinegar, honey, and pepitas; toss to coat and continue to cook for another minute. Serve with pork.
