Ingredients

medium red onion, thinly sliced
1/4 cup balsamic vinegar
2 tablespoons honey
Salt and Black Pepper
tablespoons olive oil
pork cutlets with bone, about 1/4 inch thick
1 medium red cabbage, shredded (about 4 cups)
1/2 cup roasted and salted pepitas

Instructions

Place onion in a small bowl with 1 tablespoon balsamic vinegar and 1/2 teaspoon salt; stir well.

In a 12-inch skillet, heat 1 tablespoon of olive oil over medium heat. Meanwhile, season pork chops with salt and black pepper; add half of the chops to the skillet. Cook 2 to 3 minutes each side or until golden brown. Transfer to a plate; keep warm; repeat with remaining chops and remove to the plate.

In the same skillet, add 2 tablespoons olive oil and the cabbage. Saute over medium heat until wilted, about 10 minutes. Add the onions, remaining balsamic vinegar, honey, and pepitas; toss to coat and continue to cook for another minute. Serve with pork.
