A healthy weeknight dinner meal plan featuring early fall dinners to help get us into an autumn groove. Using the best of late summer ingredients with early fall flavors. Fun, easy and healthy dinner!
We’re looking at mid-September already, and I feel like I’m finally reaching that early fall vibe I love.
The trees are turning, fall produce is beginning to arrive in the markets.
And I’m ready to start thinking about cozy, fun, and delicious food.
This week, it’s all about the early fall dinners with lingering summer flavors.
We’ll be making a meatless curry for Monday, and a classic stuffed bell pepper recipe using ground beef on Tuesday. But swap that beef with another ground meat of your choice if you’d like.
Dinners for the rest of the week are corn chowder, easy and healthy fish tacos, and chicken enchiladas.
As always, we’re making a treat. And this week, it’s a pumpkin spice cookie recipe I absolutely adore.
Early Fall Dinners Week
Capture late summer’s best ingredients and integrate them into delicious early fall dinners.
Make healthy, refreshing drinks, like Iced Tea, and take a leisurely walk with no intention other than to view nature in its early fall glory.
Take time to organize your pantry this week and make a list of fall ingredients you will need. I’m clearing space for additional canned products too as I want to stock up a bit more this fall.

Monday: Vegetarian Instant Pot Chickpea Curry
A quick and healthy meatless Monday dinner using the Instant Pot. Serve over rice and add a green salad.
Tuesday: Pioneer Woman Stuffed Bell Peppers
Using lean ground beef, these stuffed bell peppers are filled with end of summer produce like zucchini and tomatoes. Serve with a salad.
Wednesday: Corn Chowder with Bacon
"Pureeing some of the corn-and-potato mixture in a blender gives this soup rich creaminess without much cream. Red bell pepper imparts a beautiful golden hue to the chowder (and is a great source of vitamin C). For a final touch, a little bacon crumbled over this easy corn chowder recipe goes a long way."
Thursday: Grilled Fish Tacos
"Instead of deep-frying the fish for these fish tacos, we coat the fish with a flavor-packed chile rub and grill it instead." Serve with coleslaw and I'm also making iced tea.
Friday: Easiest Chicken Enchiladas Ever with Leftover Chicken
Perfect for a Friday night, these chicken enchiladas are the easiest I make. You do need leftover chicken so consider a rotisserie chicken or cook a couple of chicken breasts or thighs earlier in the week. Serve with a salad and a yummy dessert!
Treat: Pumpkin Spice Cookies
Get that early fall vibe going with these melt-in-your-mouth pumpkin cookies!
