Welcome to March
As the calendar page turns to a new month, and a brand new season is within sight, we begin to crave lighter, fresher food. And with springtime schedules as they are… the easier the better!
This week’s menu has that in mind. Spring flavors, easy cooking (easy cleanup too), and as always, healthy flavorful meals.
Easy March One Pot Diners Menu
Monday’s dinner is a perfect way to capture springtime vegetables just coming into season. It’s a hardy, delicious soup that’s still filling and welcoming on the chilly days of March. I’m adding a large salad and whole-grain bread.
Tuesday’s dinner is a delicious one pot pasta with seafood meal that looks and tastes as if spring is already here. Ready in 30 minutes or less!
Wednesday’s dinner is a perennial favorite all year, but also in the spring. It can be spicy or mild depending on the ingredients you add. Simple and delicious! Add healthy greens to round out the meal.
Thursday’s dinner is perfect for weeknight cooking. It’s quick, easy, and made in one skillet. Serve over street taco size tortillas for fun, or over a bowl of your favorite grain. The condiments make this meal super healthy.
Friday’s dinner is a Mediterranean inspired one pan baked cod that’s ready in 15 minutes. One of my favorite meals this spring!
