Easy One Pot Dinners in May Meal Plan
This week begins the unofficial start to summer. And we will celebrate large and deliciously on Monday.
If you’re still planning your Memorial Day menu, we have some amazing and delicious ideas for everyone at your table, from vegetarian options to healthier takes on Memorial Day favorites. (See Monday’s link below for recipes.)
And then comes the rest of the week.
Tuesday’s dinner is a one-pot pasta dish that’s low prep and healthy. After Monday’s feast, low prep sounds good, right?! And, it’s ready in about 30 minutes.
Wednesday’s dinner is a Mediterranean-style skillet dinner with chicken thighs. I’m very much looking forward to this easy meal.
Thursday’s dinner is a chowder recipe… that isn’t really a recipe. It’s easy to make with your seafood preferences and adaptable to your favorite veggies!
Friday’s dinner is healthy food personified. It’s rich in flavor, simple to make in one pot, and also easy to substitute vegetables you prefer. I’m adding turkey meatballs for additional protein, but fried eggs would be amazingly delicious, too!
The Treat is a treat that I can’t actually say is healthy… but oh my is it delicious! Espresso anyone?
