If you love chocolate, you’ll love this skillet brownie. Simple and easy to whip up… but spectacularly chocolaty. The added espresso enhances the rich chocolate and turns an everyday brownie into something special.

Fudgy Skillet Brownie Ingredients

  • Unsalted butter (if using salted butter, cut the salt measurements in half).
  • Semisweet chocolate chips
  • Unsweetened cocoa powder
  • Cooking oil
  • Granulated sugar
  • Large eggs
  • Instant coffee granules (optional)
  • Pure vanilla extract
  • All-purpose flour
  • Baking powder + salt

How to Make a Skillet Brownie

Preheat the oven to 350 degrees and lightly coat a 10-inch oven-safe skillet.

Melt the butter, chocolate chips, and unsweetened cocoa powder in a medium bowl set over simmering water. Let cool for 10 minutes before stirring in the oil, eggs, coffee and vanilla.

Fold in the flour, baking powder, and salt. Pour into prepared skillet.

Bake until the surface appears set; about 35 to 40 minutes. Let cool before slicing.

Ingredients 

  • 1/2 cup 1 stick butter
  • 1 1/4 cup chocolate chips
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup neutral oil vegetable or coconut
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon instant coffee granules
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  • Preheat the oven to 350 degrees and lightly coat a 10-inch oven-safe skillet. Set aside.
  • Melt the butter, chocolate chips, and unsweetened cocoa powder in a medium bowl set over simmering water. Let cool slightly before stirring in the oil, eggs, coffee granules and vanilla. Then add the flour, baking powder, and salt; mix until just incorporated. Pour the batter into the prepared skillet and spread into an even layer using a spatula.
  • Bake the skillet brownie until the surface appears set, a toothpick inserted into the center should come out mostly clean; 35 to 40 minutes. Let cool completely before cutting into wedges — or serving family style with spoons!
