I’m not sure why fall schedules can get as hectic as they do, but it always seems to happen. Weeknight dinners can easily be shifted to the backburner in place of easier solutions, like takeout.
In an effort to keep dinners manageable, healthy, and also delicious, this week’s menu ideas are all about easy meals, keeping calories in check, while celebrating the best flavors of the season.

Healthy 20-Minute Fall Dinners Menu
Monday’s dinner is a meatless dinner, ready in 20 minutes, and always a takeout favorite. Packed with healthy vegetables and lots of flavor. That, my friend, is a great way to begin a new week!
Tuesday’s dinner is speedy, hearty, healthy, and perfect for the often chilly days of October. This hearty soup is filled with potatoes and greens. Add a pan-seared lean protein if needed or even a quick grilled sandwich to round out the meal.
Wednesday’s dinner is another quick and easy skillet dinner that’s ready in 20 minutes, although that’s hard to believe. With a few store-bought conveniences, this meal will be ready for the table in no time!
Thursday’s dinner is a 15-minute, super easy meal that’s healthy and perfect for fall. But quick doesn’t mean it isn’t delicious!
Friday’s dinner is all about hearty chili in the multi-cooker. I can’t skip October weekends (or Fridays) without some kind of chili on the menu! Try a batch of Jalapeno Popper Corn Muffins to round out the meal.
The Treat is a healthier donut recipe we’re loving this season. Chili, pumpkin… it MUST be fall!
