Memorial Day often is noted as an unofficial beginning to summer. I’m ready… are you?
Warm sun, long beautiful days, patio dining, backyard grilling, picnics in the park… music in the park, beachy afternoons, and lakeside hikes.
And… feasts and gatherings, and lots of delicious food.
It’s what summer is all about.
So… we’re keeping dinners summery this week. Here’s what we have on the menu:
Healthy High Protein Dinners Menu
Monday’s dinner is all about Memorial Day. What are your traditions? Whether it’s hot dogs and burgers, BBQ chicken, ribs… or potato salad, this is the day to pull out the stops. Tuesday’s dinner is a hardy but easy 15-minute salad featuring BBQ chicken. So if you’re wondering what to cook on Monday, and chicken sounds good… make extra for Monday!
Wednesday’s dinner is an easy skillet ground meat meal with healthy bok choy, although feel free to swap in your favorite green, be it mustard greens, swiss chard, or even spinach. I’m serving over whole grain noodles.
Thursday’s dinner is a quick high protein dinner with seafood and cauliflower rice. A flavorful salsa brings this summer meal all together.
Friday’s dinner has been a standby dinner for years at my house. It’s healthy, easy to make with ground meat and lots of healthy veggies. Topped with cornbread, it’s just a perfect Friday meal!
Treat: When I think about summer, no bake desserts come to mind. The treat this week is one of the most popular no bake desserts at 31Daily. Easy to make, festive, and delicious!
