Healthy May Seasonal Dinners: This week’s dinner menu is highlighting all things in season for May. We’re cooking Mediterranean Diet-style dinners, packed with fresh deliciousness, and ready in 20 minutes or less!

As we are halfway through the month of May and farmers’ markets are opening everywhere, it’s time for nearly summer dinners.
Driving out of state last weekend, I came across multiple farmers’ markets with their bright tents, beautiful flowers, and healthy, fresh vegetables.
It was all I could do to keep myself from stopping and shopping!
This week, I’m taking dinner inspiration from my post “What to Cook in May: Produce and Recipes.” It’s packed with seasonal recipes and ideas.
I don’t want May to pass by without highlighting these delicious vegetables.
What’s In Season for May?
- Asparagus
- Broccoli
- Cabbage
- Cauliflower
- Bitter greens: collards, kale, mustard, turnip
- Leafy greens and lettuce
- Radishes
- Rhubarb
- Spinach
- Strawberries
A Mediterranean Diet Style of Eating
I’m currently reading “Mediterranean Every Day” by Sheela Prakash. I love her take on healthy eating when she says:
“As a registered dietitian, I am constantly asked for advice on how to eat or how to achieve particular health goals, and my answer is always the same: everything in moderation.”
And then she writes that the Mediterranean Diet is about feel-good, colorful ingredients, about using what you have on hand, “which means it’s just as much about seasonality and well-rounded eating as it is about leaning on the pantry.”

20 Minute Healthy May Seasonal Dinners: What to Cook (May 16)
Monday: Spring Orzo Primavera with Asparagus, Broccoli, and Tomatoes
Orzo Primavera with Lemon, Asparagus, Broccoli, and Cherry Tomatoes is like a bite of spring… in a pot. Every taste is filled with fresh vegetables and spring flavors. It’s a pasta primavera recipe that’s ready in 20 minutes or less. A chicken breast or fish would be delicious with this if you want to add additional protein.
Tuesday: Mediterranean Greek Chicken Sheet Pan
Mediterranean Sheet Pan Greek Chicken is a simple dinner recipe with delicious and juicy chicken, Greek flavors, and roasted vegetables. It's a one-pan dinner that's easy to make and incredibly delicious! I'm adding asparagus to the dish to keep it May seasonal!
Wednesday: Easy Instant Pot Beef and Broccoli

Friday: One Pot Pasta
This One Pot Pasta is one of my favorite go-to dinner recipes that's fun, easy, and perfect for Fridays. Especially when there are leftovers for the weekend. I'm making this dish with ground turkey this week. Add in all the vegetables you have left from the week.
Treat: Strawberry Rhubarb Cake
Strawberry Rhubarb Cake, a favorite seasonal cake recipe. A buttery batter filled with strawberries and rhubarb and flavored with vanilla and nutmeg. Delicious!
