Traveling the Globe
I didn’t plan for this week’s dinner meal plan to be a globe-trotting menu. But what spoke to my dinner-loving heart was dishes featuring flavors from all parts of the world. From the Mediterranean to Mexico, favorite Asian takeout, and a few that hit closer to home.
Does this mean the January travel bug is hitting? Who knows! But I’m happy to cozy into a chilly week at home with warm dinner flavors the family will love!

January Healthy 30 Minute Dinners Menu
Monday’s dinner is a 15 minute dinner with pantry staples you may already have on hand! It’s bright, flavorful, and easy to adapt with ingredients you love. While this is a vegetarian dish, you can easily add cooked chicken (like Rotisserie or leftovers) or even cooked shrimp.
Tuesday’s dinner is a healthy take on a TikTok trend that sends us to Mexico with delicious flavors and an easy recipe. Serve with your favorite taco condiments and add grains if you wish!
Wednesday’s dinner has familiar flavors, is a loved Asian takeout favorite, and will be ready in 30 minutes or less. Packed with healthy veggies, it’s a dinner I know the family will love.
Thursday’s dinner on this meal plan is almost always seafood, except for the Lenten period where we switch to Fridays. It’s another 15-minute, easy dinner with delicious flavors. I’m serving it with roasted mini potatoes and sauteed spinach.
Friday’s dinner is a quick and easy pasta dish that is perfect for Friday!
The Treat is in keeping with our easy theme this week and is a January favorite. Instead of scooping individual cookies, we’re making bar cookies and calling it a day!

These healthy January 30 Minute Dinners are bright and delicious, and will have you traveling the globe and still get dinner on the table in a hurry!
Monday: Curry Coconut Noodle Soup
