October One Pot Dinners: October is the perfect month for one pot dinners with intense savory flavors, comforting warmth, and easy recipes. It’s a busy season, weeknight dinners need to be delicious and simple.
This week we’re keeping it simple with one-pot dinners we love. Simple recipes, fairly quick, healthy with whole seasonal vegetables, meats, broths, and seasonings.
I love weeknight dinners that are made in one pot, or even one tray (as some of these are). It’s simple cleanup, hearty, and comfort food perfect for October.
Here’s what we’re cooking this week.
October One Pot Dinners
October and curry belong together — but I might be known to say that about curry 12 months of the year. I love curry — but especially in the fall.
We’re beginning the week with a simple and easy one pot curry that contains only a handful of ingredients. And lucky us… if there are leftovers, lunches will also be delicious!
On Tuesday we’re making a classic family favorite, southwestern style. One pot, 4 minutes of cooking time, and utterly yummy.
Wednesday’s dinner is also a classic, a takeout classic, that’s equally quick to make, and one of my favorites! On Tuesday, we were inspired by the “South West.” Wednesday is inspired by the “South East.”
Thursday’s dinner is a one-pot “skillet” shrimp and veggie dish that’s delicious on its own or served over a grain. For my guys, I’ll likely serve it over grains to fill them up.
Friday is a game-day classic… and it’s super easy. It’s homemade pizza (in this case a one-tray dinner) that’s super easy to make at home. Be sure and buy store-bought pizza crust. I look for a ball of pizza dough in the freezer section of my market and let it come to room temperature before stretching into a crust.
And finally… I’m craving chocolate this week. Richly flavored chocolate — and cookies are made on one tray. I’ve included a link to my Mexican Chocolate Cookies recipe below.
But it’s also apple season… and before the season is gone altogether… I absolutely must make another batch of 3 Ingredient Applesauce.

Tuesday: Instant Pot Taco Mac and Cheese
This Instant Pot Chili Mac and Cheese is an easy pasta dish and family favorite dinner. A blend of lean ground beef, macaroni, chili beans, tomatoes, and spices. And, of course, melting cheddar cheese. An easy dinner to table meal in around 15 minutes, give or take a few.
Wednesday: Easy Ground Beef and Broccoli
Instant Pot Ground Beef and Broccoli is my go-to dinner whenever I’m craving that favorite takeout classic. Made with ground beef, it’s an incredibly easy and delicious adaptation of the original.
Thursday: One-Pot Garlicky Shrimp & Broccoli
Shrimp cooks quickly in this easy, one-pot recipe, making it perfect for busy weeknights. Serve over whole grains or rice.
Friday: Homemade BBQ Chicken Pizza
A simple and easy one "pan" dinner for Friday... use store-bought pizza dough, cooked chicken, and your favorite pizza toppings. Yum!
Treat: Mexican Chocolate Cookies
I'm craving chocolate, cookies are baked on one "tray" and they make perfect weekend treats for game watching -- hikes -- or anything else fun we can think of!
Treat: Easy Homemade Applesauce: 3 Ingredients
This Homemade Applesauce is super easy to make, utterly delicious with fresh apples, and cooks in 15 minutes. Slightly sweet with hints of cinnamon. Absolutely yummy with only 3 ingredients!
