This sweet and juicy watermelon salad is the essence of summer. Ready in minutes, it’s a beautiful combination of sweet watermelon, cool and crisp cucumbers, and fresh herbs like dill and mint, all tossed with an easy lemon dressing you’ll love.

What I Love About This Smashed Cucumber Watermelon Salad

This light, Greek-style, Mediterranean-inspired watermelon salad is a super quick and easy savory yet sweet summer salad that’s easy to make in about 5 minutes, give or take. I love the punch of flavor that feta brings to the watery cucumbers and melons.

Fresh herbs of mint and dill accentuate all of the flavors, bringing them into harmony and creating this perfect summer salad I hope you love.

Along with my Mediterranean chopped salad, this smashed cucumber salad is a favorite. One, because it’s utterly delicious, but second, it’s super quick and easy!

Watermelon Salad Ingredients

Here’s what you need to make this easy salad (ingredient measurements are in the recipe card at the bottom of this post).

  • Persian cucumbers: English cucumbers could also be substituted.
  • Cubed watermelon: For convenience, you can usually buy cubed watermelon at the market. If preparing your own, look for a seedless watermelon.
  • Crumbled feta: For the most flavorful option, look for a block of feta that you crumble yourself.
  • Fresh herbs: mint leaves and chopped fresh dill
  • Berries: While these are optional, I love the flavor contrast they bring. I usually opt for blackberries, as they are prolific during this season, but choose your favorite berry.

Simple Dressing

  • Olive oil
  • Lemon juice
  • Honey
  • Salt and pepper to taste

How to Make Smashed Cucumber Watermelon Salad

Slice cucumbers half lengthwise on a cutting board. With the flesh facing up, use the flat side of a chef’s knife to smash the cucumber, breaking the flesh. Chop into 1-inch pieces.

In a salad bowl, combine the cubed watermelon, smashed cucumber, berries, crumbled feta, dill, and mint.

Drizzle the dressing over the top, toss together, and serve!

Can you Make a Watermelon Salad with Feta Ahead?

You can make the dressing ahead of time. It will keep in the fridge for up to 3 days. Once you’re ready to serve, toss it with the freshly cut cucumbers and watermelons.

What to Serve with Watermelon Salad

Watermelon salad is perfect for backyard gatherings with neighbors, friends, and family. It makes any grill party or picnic even more delicious!

Because it is a quintessential summer salad, it’s perfect with Greek Chicken Souvlaki or easy chicken kebabs. But I also love it with Beef Kofta, a delicious Lebanese street food recipe.

If seafood is on the menu, this salad works beautifully with Salmon Burgers or Spanish Cod both recipes are ready in about 15 minutes.

Ingredients

  • 1/4 cup feta crumbled
  • 3-4 mint leaves chopped

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons honey
  • salt and pepper to taste
