As we transition into spring this week, we’re celebrating with easy, healthy, and delicious springtime skillet dinners.
After celebrating St. Patrick’s Day last week, we had leftover Instant Pot corned beef. And with those leftovers, I made Skillet Corned Beef Hash. It was so delicious and easy. The idea of cooking a week of skillet dinners, highlighting springtime vegetables, seemed enticing and wonderful!
And that’s the backstory to this week’s healthy dinner menu. This proves that even leftovers can spark creativity!
Here’s what we’re cooking next week.
Springtime Skillet Dinners
We’ll begin the week with a Mediterranean-inspired skillet chicken breast dinner with lemons, olives, and artichokes. The recipe calls for bone-in chicken breasts, but substitute what you have or can easily get from the market.
On Monday, as I cook dinner, I’m baking 1 to 2 extra chicken breasts for Wednesday’s dinner.
Tuesday’s dinner is spring personified with this super easy skillet pasta with lemon, shrimp, and snow peas.
You will need cooked chicken for Wednesday’s dinner. This very easy but delicious Italian Chicken Quinoa bake is one of my favorite quinoa dinners.
If you want to make Wednesday’s dinner quicker, prep the quinoa ahead. I’m making this 1-Minute Instant Pot Quinoa.
On Thursday, it’s seafood night with seared salmon and a green peppercorn sauce. Green peppercorns are a favorite spice and one I try to keep on hand.
And as always, we try to keep Friday dinners easy and fun. It’s time for a Taco Friday with this easy Taco Skillet. Add your favorite condiments and go heavy on vegetables!

Monday: Chicken with Lemon, Olives, and Artichokes

Thursday: Seared Salmon with Green Peppercorn Sauce
