What I Love About This Mug Cake

We simply adore mug cakes. I'm not sure if it's the idea of an individual dessert, the simplicity of ingredients, or how super quick they are to make.

While this mug cake is wonderful year-round, I'm writing the recipe in the lead-up to Easter. And for me, coconut cakes and Easter belong together.

Growing up, it wasn't Easter without a coconut bunny cake. And childhood traditions are hard to break. Thus... I'm extremely delighted when I make a coconut mug cake in the spring. All that's missing is the bunny ears and jelly beans.

Mug Cake Ingredients

  • Butter: Adds richness and moisture to the cake. Melted butter helps create that soft, tender crumb in just minutes.
  • Flour: All-purpose flour provides structure for this simple mug cake, giving it a light but satisfying texture.
  • Sugar: Sweetens the cake and helps create a soft, delicate crumb as it bakes.
  • Coconut Emulsion or Coconut Extract: Brings that signature coconut flavor. Coconut emulsion has a slightly richer, more natural taste, while extract works beautifully for a classic coconut note.
  • Shredded Coconut Flakes: Adds texture and boosts the coconut flavor throughout the cake. Use sweetened or unsweetened depending on your preference.
  • Baking Powder: Gives the mug cake its lift, helping it rise quickly in the microwave for a soft, fluffy texture.

Mug cakes are so simple to make! Simply add all of the ingredients into a small bowl and whisk or stir until a creamy batter forms.

Or, mix the ingredients in the mug and then microwave it.

Topping Ideas for Coconut Mug Cakes

I mentioned the Easter bunny cake earlier. For me, I can't imagine coconut cakes without buttercream frosting topped with shredded coconut. But making buttercream for a single-serving dessert seems a bit much.

While shopping at Target, I found an easy store-bought frosting I could refrigerate for future coconut mug cakes or cupcakes.

However, topping the mug cake with whipped cream or ice cream is also an easy and delicious option. The men in my family prefer theirs with ice cream.

Toasted coconut flakes, which I toast in a dry nonstick skillet for about a minute, are simply a must!

Tips on Making Mug Cakes

  • Use a microwave-safe mug! Microwave-safe ramekins work too.
  • Several of our readers like their mug cakes less sweet. Try reducing the sugar to 1 tablespoon.

Ingredients

  • ¼ cup all-purpose flour
  • ½ teaspoon baking powder
  • 2 tablespoons granulated sugar
  • 2 tablespoons shredded coconut
  • 3 tablespoons milk
  • 1 tablespoon sour cream
  • ¼ teaspoon coconut extract
  • 1 tablespoon butter melted

Instructions

  • In a small bowl, combine all of the ingredients with a whisk or small spatula.
  • Transfer the batter to a mug and microwave for 1 to 1 ½ minutes. Mine is perfect at 1 minute 15 seconds. Begin checking at 1 minute.
  • Let cool slightly and top with buttercream frosting, whipped cream, shredded coconut, toasted or not.

    Absolutely delicious! I had a sweet craving and this hit the spot perfectly. I didn't have any sour cream but greek yogurt worked fine.
    I added a spoon of cold strawberry jam on top and ate it whilst it was still steaming - so good !
