We’re celebrating the Emerald Isle all week with these Healthy Irish Dinners. From soups to seafood, a gluten-free Shepherd’s Pie, and yes, even a St. Patrick’s Day classic, Corned Beef and Cabbage.
St. Patrick’s Day is a big deal at our house. With Irish heritage on virtually every branch of the family tree, O’Hara on my grandmother’s side, we love to celebrate those “green” roots.
Ireland is a land of beauty and simplicity. A country filled with people who love their heritage, families, communities.
Now, more than ever, we need those bonds to navigate this new world we find ourselves in. With worldwide cancellations of St. Patrick’s Day festivities, I think it’s important to create opportunities to celebrate and make memories with those we love.
Robust and hearty comfort foods dominate the Irish culinary palate. Yet to me, the food is also fresh and incredibly delicious.
This week, I’m focusing on takes of familiar Irish foods, made healthier and easy to make at home.

On Tuesday, St. Patrick’s Day, I’ve added an Instant Pot Corned Beef and Cabbage. But if you don’t have an Instant Pot, or are thinking about something else… here are a few more ideas:

Monday: Slow Cooker Cream of Potato Soup

St. Patrick's Day: Instant Pot Corned Beef and Cabbage
This Instant Pot Corned Beef and Cabbage will make the corned beef more tender and juicy than you can believe. Plus, it shaves off quite a bit of time than traditional methods. However, if you don't have a pressure cooker, our Easy One Pot Corned Beef and Cabbage recipe is just as tasty!
Wednesday: Cabbage, Sausage and Potato Soup
I love this hearty soup because I can use leftovers from Tuesday's dinner. If any corned beef remains, I'll add some to the soup instead of sausage. Otherwise, a toasted slice of Irish Soda Bread, and dinner is easy and done.
Thursday: GF Spring Vegetable Shepherd’s Pie
We use cauliflower for the topping instead of the usual mashed potatoes; cauliflower has twice the fiber and about a fourth of the carbs. For a gluten-free version, use 2 tablespoons cornstarch in place of the all-purpose flour in step 3.
Friday: Simple Baked Salmon with Asparagus and Dill Sauce
This low carb recipe for "Baked Salmon with Asparagus and Yogurt Dill Sauce is so simple and easy, yet full of delicious flavor. Bake in the oven, on a sheet-pan in under 30 minutes!"
Treat: Irish Soda Bread with Buttermilk and Raisins

Treat: Non Alcoholic Irish Coffee with Citrus
Synonymous with St. Patrick's Day, Irish Coffee is a sure sign of the season. This Non Alcoholic Irish Coffee recipe with Citrus is delicious and fruity. And so simple. I absolutely love it. If you're not a fan of rum extract, you'll want to try this version!
