Wow! Welcome, November! I’ve been waiting for you all year.
November is a special month with unique flavors all of their own. Hearty, comfort food always comes to mind.
While many of us are already at least thinking about that oh-so-special end of November meal, Thanksgiving, these dinners capture the flavors without the work.
In fact, in some cases, these healthy dinners are minutes in the making.
Here’s what we have on the menu board!
Easy November Dinners
We’re keeping Monday lower carb with a Greek inspired Spaghetti Squash and Vegetable Toss. Swap in your favorite fall vegetables for this one.
Tuesday is a new favorite of mine. It’s a 4 minute cook in the Instant Pot and certainly captures November flavors. Also, much healthier than it’s cousin, a traditional Mac and Cheese.
On Wednesday, we’re making a 20 minute or less easy Italian Wedding Soup packed with veggies and Thursday is a maple glazed wild salmon fillet, also super easy.
And Friday… it’s party time! This Instant Pot Buffalo Chicken Sliders are easy and delicious!
The treat? I wouldn’t never forget that. How about gingerbread? Are you ready for those flavors? This gingerbread mug cake is one I find myself making all year, but especially during the next two months.
