As mid-October arrives, I feel like we’re finally getting our fall legs. Pumpkins are lining fences and doorposts, and colorful leaves waiting to be raked, lie in piles.
Halloween candy is more tempting than ever this year…
And fall music playlists are streaming in the background of my kitchen.

Flavor Packed Comfort Food Dinners
We’re continuing our series on comfort food dinners this week. But with a twist.
This week’s dinners are inspired by flavors found all over the world.
From a Peruvian inspired Quinoa Stuffed Peppers for Meatless Monday, to an Eastern European inspired unstuffed cabbage roll soup on Tuesday.
We continue with this theme for an Asian inspired Instant Pot Chicken with Bok Choy on Wednesday.
A takeout favorite of Coconut Curry Spiced Salmon takes Thursday’s spot.
We’ll end the week with a fusion, Friday-perfect dinner of Mexican Taco Mac and Cheese, a marriage of comfort food, and inspired flavor.
The treat, however, is all fall. And one of our most popular posts during the months of autumn. A slow cooker apple crisp will keep everyone in treats all weekend long.
