30 Minute or Less Dinners Menu
Monday’s dinner is a 20 minute nourishing and vibrant soup that’s simple to make in minutes. Perfect for winter but with all the greens, it puts me in a spring mood. Serve with salad!
Tuesday’s dinner is an easy take on Taco Tuesday using arguably the “best” taco meat. Build your own tacos with all the healthy condiments you love and dinner is ready in a little more than 20 minutes.
Wednesday’s dinner is a healthy take on meatballs with Asian-inspired herbs and spices. Serve with rice and roasted vegetables. For me, it will always be broccoli! Maybe brew yourself a cup of Jasmine green tea.
Thursday’s dinner is a 15 minute skillet salmon dish with spring-like flavors. Serve with your favorite grain or potatoes, and steamed vegetables.
Friday’s dinner takes a little more than 30 minutes (give or take). But I’ve been craving it, and I justify the time budget by the 20-minute meals this week (smile). This is a simple, budget-friendly meal the family loves. Customize it with your favorite toppings and beans (refried, black, pinto, etc.).
The Treat isn’t healthy (unless you count the espresso), but it’s quick delicious, and portion controlled– if you can stop at one!
