It’s Easter week and a busy one at that.
Some schools are on spring break, some families are busy with spring activities, and Easter is this coming week.
It’s exactly this kind of week where simple and easy 5-ingredient dinners come in handy. And when they’re also healthy, it’s a win all the way around.
Healthy 5 Ingredient Spring Dinners
Here’s what we have planned this week.
Monday begins with a skillet chicken dinner, packed with spring flavors and contains only 5 ingredients. Grocery shopping will be a breeze this week!
On Tuesday, we’re making a simple traybake tilapia that’s big on flavor. I’m adding wilted spinach, or kale– whichever looks best at the market, and roasted potatoes.
For Wednesday we can’t let spring pass without a delicious spring pasta dish. This orzo dish is 5 spring ingredients you will love.
Thursday’s dinner is bursting with tropical flavor in a 5 ingredient Cajun-style meal with pineapple, a sweet treat that has been catching my eye at the market this week. (If you’re craving pineapple too, you might like my Hummingbird Cake recipe).
Friday is Good Friday and we’re celebrating with a Green Fish Curry that’s simple and healthy… and super easy. This gives us time for Easter activities.
The treat is all about Easter and it doesn’t get easier than with these bright, festive cookies.
