Getting Started on the Mediterranean Diet

As we roll into January, you may be thinking about healthy goals you’ve set for yourself (my hand is raised here too). The Mediterranean Diet is a great place to begin. It’s not strictly a diet, with do’s and don’ts and endless restrictions.

Instead, this way of eating emphasizes easy-to-prepare plant-based foods and healthy fats.

It’s one of the reasons the Mediterranean Diet is considered a lifestyle rather than a “diet.” It’s a beautiful, simple way to prepare, plan, and serve healthy foods.

Here is a brief overview of what to eat from the Cleveland Clinic:

  • Lots of vegetables, fruit, beans, lentils and nuts.
  • A good amount of whole grains, like whole-wheat bread and brown rice.
  • Plenty of extra virgin olive oil (EVOO) as a source of healthy fat.
  • A good amount of fish, especially fish rich in omega-3 fatty acids.
  • A moderate amount of natural cheese and yogurt.
  • Little or no red meat, choosing poultry, fish, or beans instead of red meat.
  • Little or no sweets, sugary drinks, or butter.

Let’s take a look at this week’s dinner menu.

January Mediterranean Diet Dinners Menu

Monday’s dinner is a hearty bowl filled with delicious flavor and hearty grains, a perfect way to enjoy the Mediterranean Diet. If desired, serve with whole grain bread and a green salad on the side. Consider making your own vinaigrette with extra virgin olive oil.

Tuesday’s dinner is a classic Greek meal I love to make all year, but most especially in January. It’s bright, delicious, and fun, with fresh greens and crisp flavors. Serve with pitas and Greek Tzatziki or 2 Minute Greek Yogurt Sauce.

Wednesday’s dinner features farro, another healthy grain we love. This simple skillet dinner with lean chicken is a delicious dish for midweek. Serve with healthy greens on the side.

Thursday’s dinner is a beautiful salmon dish with couscous that comes together in 15 minutes. It doesn’t get better than this!

Friday’s dinner is an easy dish to prep ahead and features yet another grain to keep you full and satisfied. It’s a bowl meal that seems especially perfect for Friday. Add a salad to round out the meal.
