As we approach mid-January, the business of life post-holiday becomes very real. Life return to a “somewhat” normal routine. Including dinners.
These January One Pot Dinners will provide hearty dinners, with super easy cleanup. Doesn’t that sound divine?
Here’s what we have this week!
January One Pot Dinners
Monday begins with a deliciously healthy one-pot pasta dish. Packed with protein and healthy vegetables, it’s a perfect start to the week.
Tuesday will bring a Taco Tuesday favorite. All in one skillet! I think it’s a fun way to bring everyone together with these party food that’s super easy to make for a weeknight.
For quinoa lovers, Wednesday night is an Italian Skillet Chicken Quinoa Bake that’s one of my favorite ways to use this healthy grain.
On Thursday our one-pot theme is an easy Sheet Pan Broiled Salmon with Broccolini that I’m also serving with roasted potatoes.
We’re using ground beef for Friday’s One Pot Pasta with Broccoli. It’s super easy, and perfect for Friday!
The treat this week could also be described as “one pot.” Or maybe — one vessel. It’s a comfort food classic made quick and easy in the microwave.
