With summer in full swing, we’re making healthy July 20-Minute Dinners all week. The recipes are quick and easy, nourishing, and perfect for the season, from Mediterranean Diet meals to seafood, pasta, tacos, and more. The treat? Think picnic.

Let’s get to the menu!

July 20 Minute Dinners Menu

Monday’s dinner is a 20-minute Mediterranean Diet seafood dish featuring salmon and zucchini in a creamy tomato sauce. And it’s ready in no time. Add a large green salad to round out the meal.

Tuesday’s dinner is a multi-cooker favorite featuring quinoa, a healthy good-for-you-grain. It’s simple, delicious, and ready in minutes. Add your favorite taco condiments to top this easy bowl food.

Wednesday’s dinner is a dish I serve all year, but I especially love it in summer with fresh tomatoes, zucchini, and corn. Make it your own by adding your favorite veggies and pasta, and serve with a summer salad, like Grilled Corn Salad with Feta!

Thursday’s dinner is a fun meal. It’s bringing summer to the table with a 15-minute recipe, perfect for picky eaters and those who like dinner their own way. It’s a mix-and-match, made for summer dinner.

Friday’s dinner is about BBQ chicken, red cabbage, and tacos! Absolutely delicious.

Treat: Have you had a picnic yet this season? While we’ve eaten outdoors many times this week, I’m determined to have a traditional picnic, even if it’s only a packed treat that’s taken to the park!
