What to Eat on the Mediterranean Diet
Summer is an ideal time to explore the Mediterranean Diet, with an abundance of fresh, seasonal foods. It’s a lifestyle-friendly approach to eating and living, offering tremendous health and well-being benefits. If you're new to this "diet," here are a few tips on what to eat more of, less of, and a few simple food groups to avoid.
- Eat more of these foods: Vegetables, leafy greens, fruits, nuts, whole grains, dairy (Greek yogurt and naturally low-fat hard cheeses or ricotta), beans and legumes, olive oil and healthy fats, seafood, poultry, eggs, herbs, and spices.
- Eat in moderation: Red meat.
- Avoid these foods (except for special occasions): Processed foods, added refined sugars, and refined grains.
July Mediterranean Diet Dinners Menu
This week’s meal plan features quick and easy dinners so you can spend more time enjoying the sun!
- On Monday, a delicious salmon salad is on the menu, accompanied by quick and easy couscous and a variety of fresh vegetables. You can use either smoked salmon or pan-sear a quick fillet.
- For Tuesday, we’re grilling chicken breasts (indoors or out) and serving them with a delicious grilled vegetable salad, perfect for warm days!
- Wednesday's dinner is a quick, one-skillet Mediterranean meal with ground meat and easy greens and vegetables. Serve with a salad.
- Thursday’s meal is a 10-minute entrée that’s filled with Spanish Mediterranean flavors. I’m serving it with Smashed Cucumber and Watermelon Salad that’s perfect for the season.
- For Friday, it’s grilling night, and we’re making a quick and easy Greek street food dish that’s a favorite during this time of year. Serve with greens, tomato slices, whole-grain pitas, and, of course, tzatziki sauce or 2-Minute Yogurt Sauce.
