Healthy Skillet Dinners Menu

Go heavy on the veggies with this quick yet hearty meal. While I’m using ground beef, feel free to substitute your favorite, like ground chicken or turkey.

The ingredients are few, and the cooking time is about 15 minutes, which is great news as some of us will be prepping for tomorrow’s holiday. Serve with greens and your favorite grain, like rice or couscous (or maybe Mediterranean Farro Salad with Orzo!).
