Weeknight Dinner Plan: July One Pot Dinners week will bring in a new month of summer. It’s all about simple dinners and easy cleanup. They’re wholesome and delicious and rather perfect for the first of July.
The first full month of summer is headed our way. There are so many things to do and adventures to be had in this season. Cooking is part of it, but dinners, I think, should be simple and delicious.
Here’s what we’re planning this week.

July One Pot Dinners
I hope you had a spectacular 4th of July weekend. And did fun things, like cooking best-of-summer-foods, gathering with family and friends, watched fireworks, and felt the sun.
This week, in addition to any leftovers that might still be hanging around, we’re cooking one-pot dinners to free up cleanup time.
For Monday, we’re making a meatless one-pot pasta with summer flavors and veggies.
We’re heading south of the border on Tuesday with our simple chicken tacos. I’m cooking the chicken in the Instant Pot, although we give you three easy methods you can choose. Add your favorite summery condiments.
Peaches are grabbing my attention lately, and I’m beginning to crave that summer fruit. We’re making a favorite skillet pork chop dinner with peaches for Wednesday.
Thursday is a skillet orzo dinner with seafood. I’m using cod, but salmon or other white fish can easily be substituted.
Grilling is synonymous with summer and so are burgers. It’s BBQ season and Friday is about a favorite easy burger recipe. Add salad greens and, of course, thick slices of tomatoes!
The treat this week is super summery too.

Monday: One-Pot Tomato Basil Pasta

Tuesday: Easy Mexican Chicken Tacos
This easy Mexican Shredded Chicken can be cooked three different ways. To keep the kitchen cool, I'm cooking ours in the Instant Pot. And hoping there is Corn Salad with Feta leftovers from Sunday. If not, add your favorite fresh and summery condiments.
Wednesday: Skillet Pork Chops and Peaches
Big on flavor, easy on prep and time, this Skillet Pork Chops is one of my favorite weeknight dinners. Add roasted potatoes and green salad.
Thursday: Skillet Orzo with Fish and Herbs
"Cook the orzo like rice, paella-style, on the stove, then top with fish, and bake. Feel free to substitute salmon for any flaky white fish."
Friday: Easy Grilled Burgers Recipe
This is our favorite grilled burgers recipe. Plus, it's super easy. And we all love that. Whether grilled indoors or out, this burger reciple is packed with flavor and easy to make ahead too. If you don't have a grill, a hot skillet works just fine. Add your favorite summer salads and think about eating outdoors!
Treat: Blueberry Yogurt Popsicles
These Blueberry Yogurt Popsicles are a refreshing and healthy summer-perfect snack or treat on a warm day. These creamy, delicious popsicles are super easy to make ahead and healthy at under 100 calories each.
