May Mediterranean Diet Dinners Menu
Monday’s dinner is a bit like having Friday become Monday. What? you may ask. I love to serve fun food on Fridays. For us, that would definitely include burgers. But these Monday burgers aren’t just any burger; they’re healthy, Mediterranean diet-friendly, and easy to make. You do need to chill the patties before a quick cook in a skillet or griddle so give yourself about 30 minutes for chilling. It will be worth it!
Tuesday’s dinner is a quick meal bursting with Mediterranean flavors and ingredients. And perfect for the warming days of spring. Think salmon and couscous.
Wednesday’s dinner is a quick and delicious skillet meal featuring eggs as the protein and comfort food ingredients we love. Serve with warm whole grain bread or toast to round out the meal. And a salad would be a great addition!
Thursday’s dinner is another quick seafood dish made with pasta. Look for whole grain pasta for this meal and add a large salad filled with in-season fruit, greens, and veggies. I can’t seem to add enough radishes to meals these days so my salad will be filled with these gems!
Friday’s dinner is fun food. Which just might mean… the grill. Depending on the weather, it may be outside or in a large skillet indoors. But I have high hopes for that weather and the beginning of Mother’s Day weekend. Serve with all the healthy condiments you love, like 5 Minute Greek Tzatziki Sauce or 2 Minute Greek Dill Yogurt Sauce, along with whole grain pitas.
The Treat is in honor of Mother’s Day. Lemon, lavender, and all things sweet! If you’re serving brunch, you may want to head over to our Mother’s Day page for lots of delicious ideas!
Have a beautiful, healthy & delicious week!

May Mediterranean Diet Dinners Meal Plan (May 6)
Celebrate spring with these delicious May Mediterranean Diet dinners. Enjoy fresh and flavorful meals packed with seasonal produce.
Monday: Cilantro Bean Burgers with Creamy Avocado-Lime Slaw
"Lighten up your burger! Bean patties have less saturated fat and more fiber than beef patties. They're also cheaper and easier to cook indoors--and we promise they're just as satisfying, especially with the mouthwatering creamy slaw on top."
Tuesday: Mediterranean Couscous Salad with Smoked Salmon
Mediterranean Couscous Salad is a light and healthy summer salad, lightly dressed in olive oil, and topped with incredibly delicious smoked salmon.
Wednesday: Mediterranean Potato Hash with Asparagus, Chickpeas and Poached Eggs
"This Mediterranean potato hash is another one-skillet recipe with diced potatoes, asparagus, chickpeas...and more! All dressed in Mediterranean spices and topped with poached eggs. P.S. Comes together in 25 minutes or less!"
Thursday: Creamy Lemon Pasta with Shrimp
"Yogurt makes a fine substitute for cream in the sauce for this easy pasta recipe. Just warm the yogurt (do not boil) and add some pasta-cooking water to thin it out. Lemon and fresh basil brighten up the whole-wheat pasta and complement the shrimp in this quick dinner recipe."
Mediterranean Greek Chicken Souvlaki
If you love Greek street food, this Mediterranean Greek Chicken Souvlaki recipe is for you. Tender, juicy grilled chicken wrapped in warm pitas is an incredibly simple, delicious and authentic dish to make at home. Serve with whole grain pitas!
Lemon Lavender Scones Recipe
Lemon Lavender Scones are the treat this week. I'm thinking ahead to Mother's Day and knowing that regardless of what I serve, there will be teatime! Simple to make with spring flavors!
