Quick and Healthy April Dinners Menu

Monday’s dinner is a less than 30 minute weeknight pasta recipe filled with spring ingredients like peas and scallions. It’s simple, flavorful, and a perfect way to begin a new week. Add a green salad. We’re making spinach salad tomorrow, so consider butter or other greens for your salad.

Tuesday’s dinner is a light, higher-protein dinner that’s healthy and delicious. I’m making extras for lunches throughout the week. Use prepared chicken (like rotisserie chicken) and consider prepping the quinoa ahead—I like to make one-minute quinoa. If quinoa isn’t your thing, substitute your favorite grain (like farro) or even whole-grain rice.

Wednesday’s dinner is perfect for seafood lovers. It’s a simple pan-seared Mediterranean-style fish with a delicious twist on chimichurri! Add any seasonal veggie, like asparagus, and you’re good to go!

Thursday’s dinner is packed with crispy flavor. It features tender chicken, cucumbers, and pickled onions. Again, substitute your favorite grain if desired.

Friday’s dinner is perfect for game watching (March Madness anyone?) or simply enjoying a spring Friday! Serve with greens, on a bun, or with healthy baked fries.
