What We’re Celebrating This Week

Quick and Healthy Spring Dinners Menu

Monday’s dinner is a Japanese-inspired meal that’s quick and easy to make in minutes. If you want to add protein to this speedy dish, tofu or cooked shredded chicken would be great choices. Serve with a large spring salad.

Tuesday’s dinner is a vegetarian “breakfast for dinner” that’s ready in 30 minutes or less and is packed with healthy good-for-you ingredients. Serve a salad and whole-grain bread or pitas if desired.

Wednesday’s dinner is in honor of May Day and features a bright green pea pesto over seafood. Next week, our seafood Thursday will resume its weekly spot, but fresh seafood and peas seemed right for the beginning of May.

Thursday’s dinner is a quick and easy Asian-inspired chicken and rice dish perfect for busy weeknight meals. It’s a one-pot dinner with vegetables, rice, and chicken. Serve with a salad featuring spring radishes, and enjoy an easy cleanup evening.

Friday’s dinner is a nod toward classic comfort food. It’s a recipe that recently caught my attention from a Pinterest comment that said, “This was a delicious recipe! Every family member raved about it!” Perfect for Friday!

The Treat is all about chocolate and mint, which must have inspired me because I have Mint Juleps on my mind!
