It’s going to be a week for those of you who like me, love to celebrate! Here is what’s coming up:

What is May Day Food?

I came across a great article for a simple May Day Dinner Party with delicious, spring recipes. May Day Food, they write, is “Brightly colored radishes, spring peas, asparagus, sweet local strawberries, fresh spring herbs, and alliums are all plentiful. This is the time to inhale, take in all the beauty, and celebrate the bountiful harvest, remembering that many of these spring ingredients appear for only a short precious time.”

May Day is celebrated in various ways in regions across the world. Here are a few May Day food highlights in Europe:

  • Britain: Morris dancing, the May Queen, and the May Pole
  • France: Warm glass of milk straight from a cow
  • Germany: Nonedible hearts out of rice
  • Greece: Vasilopita Cake (see this week’s treat for a recipe)
  • Sweeden: Havregröt– a flavored porridge with oats milk and sugar and served with fruit

For more May Day ideas, the modern hamlet of Serenbe, a neighboring community in Atlanta, Georgia celebrates with a May Day Brunch consisting of Buttermilk Biscuits, Herb Quiche, Coconut Granola, and Maple Pecan Cinnamon Buns.

Healthy May Day Dinners Menu

Monday’s dinner is a spring classic and made incredibly easy in a pressure cooker. Filled with spring asparagus and hearty, healthy mushrooms. Serve with greens and thick slices of whole-grain bread if you like.

Tuesday’s dinner is a delicious Taco Tuesday twist. We’re heading to the Mediterranean for an easy wrap we’re calling tacos. Add salad greens and maybe 2 Minute Greek Dill Yogurt Sauce or 5 Minute Greek Tzatziki Sauce!

Wednesday’s dinner is a Mediterranean-inspired chicken skillet dinner. Consider serving it with a Greek Salad and or roasted vegetables. Warmed pitas are delicious too!

Thursday’s dinner is a spring-perfect quiche. I love the simplicity of this dish and it’s one that always gets hearty approval. Serve with greens for a delicious and light May dinner.

Friday’s dinner reminds me of summer to come. Fresh with sparkling, juicy berries and tender roasted chicken. Salad is part of the meal so you’re good to go!

Treats: Vasilopita Cake is a traditional Greek New Year’s Day cake that’s often made for May Day festivities. Beautiful and filled with spring flavors.
