The week before Christmas is a busy time for everyone. We’re cooking and baking, or at least planning and ordering food, gifts, and even stocking stuffers.
Dinners need to be quick and healthy this week.
Here are our ideas.
Monday is a popular and delicious Chicken and Rice Bowl, perfect for using leftover chicken or turkey. Think about making a Rotisserie style chicken over the weekend, or getting one at the market.
I’m craving tacos lately. There is nothing easier than this Taco Skillet. Serve it straight from the skillet with your favorite condiments and assign someone else clean-up duty. Although, that job is pretty easy with this one-skillet meal!
Wednesday is a favorite Cabbage and Sauce and Potato soup that will warm up your toes and Thursday is a healthy, super easy, Fish Chowder.
Friday, being a fun night, is BBQ Chicken Pizza. This pizza uses cooked chicken too. Be sure to save from your rotisserie chicken for Friday night’s dinner! Homemade pizza… yum!
The treat, while not healthy, is quick. And yummy! Perfect for the week before Christmas!
