Weeknight Dinner Meal Plan: These Spring One Pot Dinners are so quick, they’re done before you know it. Filled with spring vegetables and warm, delicious flavors. Less time cleaning up means more time to enjoy beautiful spring evenings.
While we love spring sheet-pan dinners, sometimes it nice to keep the oven off. These spring one-pot dinners range from soup to stir-fry and a couple of bowl food classics.
Last week was spent preparing for Easter weekend and the making of brunches, dinners, and treats for the holiday. While I absolutely loved it, I’m looking forward to an easier cooking schedule this week. I hope you are too. And that you had a wonderful Easter!
Here’s what we’re cooking this week:
Spring One Pot Dinners
If you served ham on Easter, Monday’s dinner will be a breeze. If you didn’t, deli ham is an easy substitution. We’re making 15-Bean Soup. While the recipe is for the Instant Pot, it can easily be converted to cooking on a stovetop. Plan for extra time, though, if you’re cooking it that way.
On Tuesday, we’re making a classic Southern favorite. Chicken Bog is a simple-to-make yet hearty dish, tailored for the stovetop, that your family will love. Traditionally, it was served in fish camps, cooked on the river banks in large black pots, and served with butter beans and vegetables.
Ground turkey is a favorite ingredient for weeknight meals. It’s healthy, lighter, and flavorful. On Wednesday, it will become a delicious stir-fry with asparagus, a spring favorite! I’m serving over brown basmati rice.
Thursday is seafood night and we’re making a popular and well-loved buddha bowl with charred shrimp and vegetables. It’s very adaptable so feel free to swap in your favorite vegetables and even opt for chicken, tofu, or other protein.
Friday is a fun night — and dinner should be too. And quick? Oh yes — cooked and done before you can blink. Like in 4 minutes of cooking time. Rather perfect for a spring Friday.
And keeping with our one-pot theme, our treat hits all the spring buttons. It takes 2 minutes to make, and is made in one pot. Or… one mug. While I’m planning for Coconut Mug Cakes, I know a few family members who will be opting for the Carrot Cake Mug Cake.

Instant Pot 15 Bean Soup with Ham and Thyme is a classic, healthy and hearty soup made quickly and easily in a pressure cooker. Healthy 1-hour comfort food.
Tuesday: Chicken Bog Recipe
A traditional Southern favorite, this "Chicken Bog" is simple and quick to make. And it feeds a hungry family on weeknights. Onions, carrots, and garlic are simmered with rice and chicken stock. Add flavorful, shredded rotisserie chicken for the finishing touch.
Wednesday: One-Pan Turkey Asparagus Stir-Fry
"A quick and delicious one-pan stir-fry recipe made with ground turkey, earthy green asparagus, and sweet bell pepper in a flavourful soy sauce-based sauce." Serve over rice.
Thursday: Charred Shrimp & Pesto Buddha Bowls
These shrimp and pesto Buddha bowls are delicious, healthy, and pretty. Perfect for weeknight dinners. Add additional vegetables if you'd like or swap the shrimp for chicken, steak, tofu or edamame. I'm serving over couscous.
Friday: Instant Pot Taco Mac and Cheese
This Instant Pot Chili Mac and Cheese is an easy pasta dish and family favorite dinner. A blend of lean ground beef, macaroni, chili beans, tomatoes, and spices. And, of course, melting cheddar cheese. An easy dinner to table meal in around 15 minutes, give or take a few.
Treat: 2 Minute Coconut Mug Cake
