As I mentioned, these meals will hopefully help you clear space in the refrigerator for Thanksgiving prepped dishes.

Be creative and substitute ingredients you have on hand as much as possible this week. Think simple, easy, and healthy!

Thanksgiving Week Dinners: What’s on the Menu

On Monday, we’re making a simple seafood skillet dinner to begin the week on a healthy note. Add your favorite grains and definitely vegetables and/or salad. Remember, clean out the fridge!

For Tuesday, it’s a quick Instant Pot Vegetable Soup with ground meat. While the recipe is written for ground turkey, substitute beef, chicken or even lamb if you prefer. Serve with store-bought crusty bread. Or, if you have a bread machine, make a healthy loaf for breakfasts and lunches this week.

I’ve heard it said that the family is lucky to get dinner at all on the Wednesday before Thanksgiving. So true! If takeout works better– go for it. In case you’re cooking, I have a simple skillet dinner with sausage, potatoes, and vegetables planned. Another opportunity to clear space in the refrigerator!

Thanksgiving Day dinner is one I wait all year for. Have a wonderful day and eat all kinds of delicious food!

For Friday, it’s all about Thanksgiving leftovers. For me, at some point in the weekend, I’m always making Leftover Turkey Vegetable Noodle Soup. But the family loves the simple enchilada recipe I’ve linked below made with leftover turkey.
