The mornings are getting downright chilly in my neck of the woods. Some mornings are foggy and drizzly. As they should be in October.
I love these mornings. Especially when paired with a cup of warm, steaming tea. Classical music playing in the background is a bonus! Until someone wanders through and changes it. But such is family life.
And speaking of changes. The leaves are glowing outside my kitchen window. Fall is a glorious season.
Dinners, then, at least in my mind, should reflect these cozy autumn days. Which means, of course, comfort food!
Here’s what we have in mind!
Easy Healthy Comfort Food Dinners
This week is all about comfort food. But we’re keeping it light and healthier while still delivering those cozy fall foods we love.
Monday begins with a favorite comfort food, Eggplant Parmesan. This is a highly rated favorite at Eating Well and perfect to begin a week of cozy comfort.
Then there’s Tuesday. I’m not sure we could have a comfort food week without a Taco Tuesday. I love making this Taco Skillet. For some reason, it makes tacos super easy, and delicious. Simply add your favorite condiments and dinner is done.
Wednesday is a beautiful autumn dish that could easily be served for a special occasion. So we’ll keep quiet on how easy it is to make. It’s — elevated comfort food.
If you’ve been reading this column, we tend to always serve seafood on Thursdays. Honestly, I can’t remember why! But it’s a night to look forward to.
Seafood Fettuccini is certainly a comfort food — but this seafood pasta recipe changes it up and makes it skinner.
And Friday is a classic Sloppy Joe made with either ground beef or turkey.
Plus, we’re not forgoing our treat this week. It’s also super easy, and definitely healthier. This dense, chocolate brownie mug cake is tightened up with Nutella… and incredibly yummy.

Tacos are always a comfort food favorite. Cooking them in a one-pot skillet makes it a super easy weeknight dinner! Serve with your favorite condiments and tortillas.
Wednesday: Rosemary Chicken with Roasted Grapes
A beautiful but easy chicken thigh dinner. It's "a delicious recipe for Rosemary Chicken Thighs with Roasted Grapes! Chicken is pan seared in skillet, for crispy skin, then baked in the oven with grapes and shallots. A fast and simple weeknight dinner." Serve with crusty bread and salad greens.
Thursday: Skinny Garlic Shrimp & Broccoli Alfredo
When I think of seafood comfort food -- Seafood Fettucini always comes to mind. This "Pan seared garlic shrimp, broccoli and pasta tossed in creamy lightened up garlic alfredo sauce that contains no cream" is a healthy comfort food alternative!
Friday: Easy Sloppy Joe's
Make this easy and perfect for Friday dinner with either ground beef or turkey and choose a whole wheat bun for extra healthiness! Serve with cut-up fresh veggies like carrot and celery sticks.
Treat: Chocolate Brownie Nutella Mug Cake
A handful of ingredients and seconds in the microwave make this a healthier chocolate brownie treat that is incredibly addictive!
