While this week, for many, will be a full week of holiday preparations, or perhaps even spring break, we’re keeping dinners on the easy side.

April Mediterranean Dinners Menu
Monday’s dinner is a simple pasta dish I often make this time of the year. While the recipe is written using orzo, feel free to swap in your favorite pasta and even vegetables in the dish. Simple, healthy, and meatless. Serve with greens!
Tuesday’s dinner is a simple and healthy skillet dinner packed with vegetables. Often referred to as “breakfast for dinner,” it’s a delicious way to get dinner on the table in 20 minutes or less!
Wednesday’s dinner is a delicious grilled chicken with Romesco sauce that’s healthy, utterly delicious, and satisfying! Serve with whole grain bread if you wish.
Thursday’s dinner is a twist on Grilled Beef Kofta: Lebanese Street Food. Fun and simple with ground meat and whole grain pitas. Add 2 Minute Greek Dill Yogurt Sauce and you’re good to go!
Friday’s dinner is a seafood skillet dinner with abundant flavors and healthy grains, all made in one pot.
Treat: Hot Cross Buns for Good Friday (traditionally) or even Easter Sunday. Another idea might be the Lemon Poppy Seed Yogurt Cake I linked in the menu below.

One Skillet Salmon was absolutely delicious, and very easy to prepare. The tomato pesto is the secret ingredient, and also it’s worth getting king salmon if you can. I didn’t bother to remove the skin on the salmon. Thank you for this, I highly recommend!
