While St. Patrick’s Day is but a day, we like to celebrate the delicious food of Ireland all week. Most recipes are traditional to Ireland, but there are a few Irish American favorites too. A blending of the greens.

Healthier Irish Comfort Food Dinners
We’re beginning this week of Irish comfort food dinners with a simple Irish Potato Leek Soup, packed with vegetables and flavor. You might want to add soda bread and a salad to round out the meal.
On Tuesday, we’re baking salmon with spring flavors and vegetables, on a sheet pan, in 30 minutes or less.
Knowing that Thursday, St. Patrick’s Day, will be a dinner of slight indulgence, Wednesday’s dinner is a low-carb version of delicious Shepherd’s Pie.
For Thursday, it’s all about Corned Beef and Cabbage… and baby carrots too. Plan ahead as this meal takes a bit of time. But believe me, it’s so worth it. Plus, Friday’s dinner will use leftovers from this meal.
Friday’s dinner is a quick leftover Corned Beef Hash, made in a skillet, and done in a flash.
The treats this week are traditional and delicious, including a non-alcoholic version of Irish Coffee.
