On Wednesday, it’s Cinco de Mayo. And who doesn’t love Mexican food?!
This week, we’re making fan-favorite food, all week!
Healthy Mexican Dinner Week
Cinco de Mayo is on Wednesday. It seems wholly appropriate and delicious to celebrate with Mexican food all week.
We begin the week with a Mexican Polenta Scramble topped with chopped avocados and other favorite condiments. Add black beans to round out dinner.
For Tuesday, we keeping it gluten-free with light and delicious Zucchini Enchiladas.
Wednesday is Cinco de Mayo and we’re celebrating with a fan-favorite Sheet Pan Chicken Fajitas. Add your favorite condiments and pack in the veggies.

On Thursday, we are making a simple Mexican Chicken Casserole with butternut squash and black beans.
For Friday, we’re making simple fish tacos. Plus, they’re easy to make with family-friends fish sticks or popcorn shrimp.
The treat this week is Mexican Chocolate cookies. I look for excuses to makes these double chocolate cookies with Mexican spices. Yum!

Monday: Mexican Polenta Scramble

If you can't find them, green bell peppers can be substituted; to replace the heat of the poblanos, add minced jalapeno pepper. Make it a Meal: For supper, serve with a side of black beans."
Tuesday: Zucchini Enchiladas
Gluten-free and delicious. No tortillas, simply wrap your enchilada filling up in zucchini. Perfect for warmer days of the season.
Wednesday: Sheet Pan Chicken Fajitas
