In my neck of the woods (Seattle area), we’re looking at potentially record-breaking high temperatures on Monday. Yet as I plan our menu for next week, my fingers are chilly, and I’m gleefully sipping warm tea.
Where is the transition between chilly and hot?! I know many of you live in what, to me, are sweltering temperatures with high humidity… and love it!
I admire you!
With that in mind, I’m planning this week’s menu with warm summer nights in view. Healthy ideas that focus on seasonal produce in the market. When writing your grocery list, be sure to pick up a couple of brunches of asparagus as you plan next week’s dinner menu!
Healthy Skillet Dinners for May Menu
Monday’s dinner is a quick and easy skillet frittata featuring asparagus. I love lighter meals on warm days. Serve with a large green salad (I’ll be serving Simple Spring Salad) with your favorite vinaigrette. My husband’s appetite is a bit bigger, so slices of fresh whole-grain bread should satisfy!
Tuesday’s dinner is a favorite layered Mexican skillet casserole. Simple and ready in a few minutes with equally easy ingredients. Add your favorite condiments– I’m going heavy on cherry tomatoes and guacamole and serving with a spinach salad.
Wednesday’s dinner takes us to Italy and the amazing flavors of its cuisine. Another simple chicken skillet dinner with spinach. I’m using thin chicken breasts or cutlets to keep dinner quick. Chicken tenders are also a good option.
Thursday’s dinner is a seafood delight I’m already looking forward to! Serve with your favorite grain (or even couscous) with another large summer salad.
Friday’s dinner is a 30-minute skillet pasta dish with shrimp. With all the flavors of late spring, we love. While the recipe is written for 2, it’s easy to scale up the ingredients to fit your needs.
Treats: It’s strawberry season, and I’m looking for all kinds of ways to enjoy this juicy, healthy fruit. The treat this week isn’t made in a skillet… and it isn’t really healthy. But it’s SO good!
