Mark Twain once said: “In the Spring, I have counted 136 different kinds of weather inside of 24 hours.” Do you relate?
While the sun seems to stream in the windows more often lately, the air outside (in my neck of the woods) is still chilly. That in betwixt and between time of early spring.
By the way… “betwist” isn’t a word we hear often. Do you know what it means? Webster defines it as “a midway position” or “neither one thing or the other.”
That’s spring in the Pacific Northwest where I live.
Thus… this week’s dinner menu will be a little of both: warm and cozy with bright spring flavors and veggies. But all are 400 calories or less to keep things healthy and trim!
March 400 Calorie Dinners Menu
Monday’s dinner is one of my favorite hearty soups. If you love cabbage rolls but want a quicker and easier version, this is that soup! It’s “unstuffed,” simple, and delicious! Serve with whole grain bread, cornbread, or even whole wheat pitas!
Tuesday’s dinner takes us to the Mediterranean Sea for a chicken tagine. It’s a simple dish to make but does include one spice blend you may not have in your spice cabinet. This recipe calls for ras el hanout. The best substitutions are coriander, saffron, or a mixture of paprika, cumin, and ground ginger. Baharat or garam masala are also good choices too.
Wednesday’s dinner is a super quick and easy seafood bowl using pantry ingredients. It’s light and flavorful and could be made for lunch or dinner. I’m serving over short grain rice.
Thursday’s dinner is an ultra-quick skillet chicken dish with fresh spinach. Serve over your favorite grain or even pasta.
Friday’s dinner is a lemon fish dinner that’s ready in 15 or 20 minutes. Delicious, simple and perfect for a Friday before Easter.
Treat: Lemon Butter Tea Cookies. They are make ahead friendly to serve for treats and snacks all season.
