Mid-June Quick Dinners Meal Plan | Week of June 15

This week's mid-June meal plan is filled with quick, easy dinners for warm-weather days when you still want to cook at home-but don't necessarily want to turn dinner into a project.

As we move deeper into June, I'm looking for meals that are fresh, flavorful, and simple: 15- to 30-minute dinners, easy skillet meals, quick pasta, and recipes that lean on seasonal produce without requiring the grill. Although one of this week's dinners can be grilled if you'd like, every meal can be made indoors for those busy evenings when quick and simple is best.

Mid June Quick Dinners Menu

Here's what's on the menu this week.

  • Monday: 15 Minute Chicken Salad
    We're beginning the week with a fresh and easy chicken salad that's perfect for a warm June evening. Serve it with toasted crackers, whole grain bread, or pita to round out the meal. It's a simple, no-fuss dinner that feels light yet satisfying.
  • Tuesday: Easy Taco Casserole
    Tuesday's dinner is cozy, family-friendly, and quick to pull together. Serve this taco casserole with shredded lettuce, chopped tomatoes, avocado, salsa, or a simple green salad. Tortilla chips and guacamole on the side are always welcome, too.

    Midweek calls for something fast and nourishing, and this chicken and broccoli dinner is just that. Serve it over rice, quinoa, or noodles, or keep it extra simple with a side of fruit or a crisp cucumber salad.
